Cocoa Almond muffins

I adapted this recipe this morning to fix my cocoa craving - Flourless Chocolate Cupcakes - and it did just the trick - delicious!  Keep reading to see my adapted recipe...


1 ½  cups almond flour
¼ cup unsweetened organic cocoa powder
1 teaspoon gluten free baking powder
2 free range/ organic eggs
1 teaspoon vanilla extract (I forgot to add any vanilla)
1/4 cup virgin coconut oil (melted)
1 heaping tbsp of unsweetened roasted almond butter
¼ cup unsweetened almond milk (or milk of choice)
2 tablespoons of xylitol and 3 drops of stevia (or more if you like it sweeter)

Preheat oven to 350.  Mix almond flour, cocoa powder, baking powder and xylitol.  Add the eggs, oil, milk and stevia then mix well to form a smooth batter.  Spoon into muffin tins.  Bake for 15 minutes for mini muffins, or bit longer for large muffins, or until cooked through.  Mine made 24 mini muffins and 2 large muffins.  I will freeze the mini muffins and warm for a quick and easy treat!  Delicious!  Not too sweet and just the perfect cocoa flavour!
