Pumpkin Coconut flour muffins

Made these delicious and bouncy coconut flour muffins this morning.  I adapted this recipe:  Free Coconut Recipes




Ingredients:
6 eggs
1/2 cup pumpkin puree
1/2 cup coconut flour
1/2 teaspoon baking powder
1/4 xylitol mixed with a couple tbsp of water (or sweetener of choice such as honey or maple syrup)
1/4 cup coconut oil (melted) + another 1/4 melted to pour in muffin tin
pinch of salt

Preheat oven to 400F.  Pour melted coconut oil into bottom of muffin tin or silicone muffin moods, enough to cover the bottom of each.  Put in oven for 2 minutes to heat up.

Beat eggs and pumpkin purred or mix in blender (I used my Blendtec).  Then add the dry ingredients and mix well, or pulse in blender.  Then add remaining ingredients and mix well or pulse until combined.  Pour into warmed muffin tin and bake for about 20 minutes, until muffins have risen and bounce back up when touched and are cooked through.

Enjoy!!  These have a nice subtle, not overly sweet, more savoury flavour, which I enjoyed for breakfast.  You may increase sweetener and/or add pumpkin spices and/or add some frosting to make into more of a dessert.
